Simple Bruschetta

I made this last night for dinner. It was so simple and delicious, I definitely recommend it. Perfect for an afternoon snack, dinner, or appetizer for a summer bbq! Simple, quick, and delicious!

What you need…

  • 2 Tomatoes
  • Sliced day old Italian loaf
  • One small onion
  • 2 cloves of garlic
  • Shredded mozzarella cheese
  • EVOO
  • S&P
  • Italian Seasoning
  1. Preheat oven to 400
  2. Place slices of day old Italian bread on a non stick baking dish
  3. Give bread a quick coating of EVOO
  4. Chop up your onion and garlic
  5. Place even amounts of onion and garlic on each slice
  6. Sprinkle shredded mozzarella cheese on top of onion and garlic mixture
  7. Slice up tomatoes and place 1-2 slices on top of cheese
  8. S&P and a sprinkle of Italian seasoning
  9. Cook for 10 minutes

What I’m Obsessing Over This Week…

I thought I would put my “pinning power” to good use and start posting things that I’m loving on a weekly basis. Here are some of the things I have added to my wishlist thus far this week:

 

 

A colorful messenger bag. I love this Kate Spade coral messenger bag, and I would love to have it hanging in my closet……Maybe next paycheck…

 

 

 

I’m investing in a new Iphone this weekend, so I have been looking into cases. I found this awesome case from casemate.com. I’m currently obsessed with tortoise shell, and this is just another piece I can add to my collection…

 

 

 

Next up…CUPCAKES!! I have to try out this recipe soon! Looks delicious and perfect for a summer picnic or barbeque. Here’s the recipe (from Brown Eyed Baker).

 

 

 

Last, but not least (and definitely one of my most wanted items), is a large faced, rose gold watch. These are so cute, and so perfect with any outfit! Super classy also! And it looks so perfect paired up with some fun bracelets like these.

Summer Spaghetti

I’ve made this twice in the past week, it is so delicious and so simple! You have to try it!

What you need:

  • 1 lb of Spaghetti
  • Extra Virgin Olive Oil (EVOO)
  • Butter
  • Garlic
  • Grated Parmesan Cheese
  • S&P
  • Italian Seasoning
  • Cherry Tomatoes

-Boil water (add salt and EVOO to flavor the pasta)

-Once water comes to a boil, add the spaghetti

-While the pasta is cooking, heat up EVOO and a pad of butter in a sauce pan (enough olive oil to cover the pan)

-Mince up 3 cloves of garlic (depending on how much you like garlic) I LOVE IT.

-Add garlic to the oil and cook until you can smell the garlic, take the pan off the heat and set aside. (The garlic will continue to cook in the oil, and you do not want to burn it!)

-Once spaghetti is cooked, strain, and place in a mixing bowl.

-Mix the pasta with the garlic oil, 1 cup of grated parm, 1 tspn of salt, a tbspn of pepper, and a tspn of italian seasoning.

-Add cherry tomatoes at the end

VOILA!

Finger Lickin Chicken

I made this last night and it was absolutely delicious! You have to try it!

Chop:
Green pepper
Yellow pepper
Onions
Potato

-Chop vegetables chunky style and place in 9×13 baking dish
-Coat vegetables with salt, pepper, Italian seasoning, and E.V.O.O.
-Preheat oven to 450
-Place boneless skinless chicken thighs on top of vegetables
-Salt and pepper chicken thighs

Sauce ingredients:
-1/4 cup of maple syrup
-1/2 cup of Dijon mustard
-1 tblspn of rice wine vinegar
-a dash of BBQ sauce

Pour sauce on top of chicken thighs. Place some foil on top of baking dish, and throw it in the oven for 40 minutes.

Yum!

OOh LA LA ‘Merica

These shorts are such a fun, easy, & patriotic idea! I got this idea off of the Free People Blog. Instead of “flagging” an expensive pair of Free People jean shorts, I’m going to do this to a pair of jean shorts that I already own, but don’t get much use out of. Just use star stencils, painting tape for the stripes, and white and red fabric paint. Don’r forget paint sponges (they give more of a vintage look, as opposed to paint brushes). Can’t wait to show them off on 4th of July!

Ombre...

I had ombre hair in the beginning of this year, but I’m definitely thinking of doing it again this summer. This is a good way to bring in a lighter color for the summer, without drastically changing your hair color! Great idea for brunettes with dark eyebrows who want to bring some blonde into the mix! …Much like myself 🙂
