You have to try this recipe! It’s a perfect salad for the summer season! Refreshing and delicious!
1 red pepper (you can use any color you prefer)
1 seedless cucumber
1 large tomato
1/2 red onion
1/2 loaf of day old italian bread
-Heat up EVOO (extra virgin olive oil) in medium frying pan (enough to cover pan)
-Cut 1/2 loaf of day old Italian bread into cube sized pieces (these are your salad’s croutons)
-Throw croutons into oil and let crisp up for 5 minutes or so (make sure to flip the croutons over to crisp all sides)
-Salt and pepper croutons for seasoning
-Cut up pepper, seedless cucumber & tomato into cube sized pieces
-Cut half onion into moon shaped pieces
-1 tbspn of grey poupon mustard
-1 tbspn of honey
-4 tbspn of rice wine vinegar
-Juice squeezed from 1/2 a lemon
-1 tspn of salt
-1 tspn of pepper
-Stir in 4 tbspn of EVOO until dressing is thoroughly combined
Combine salad ingredients with crisped croutons. Pour dressing over salad. Combine. Let salad sit for 2 hours before serving to allow ingredients to soak up dressing.
