I made this last night and it was absolutely delicious! You have to try it!
-Chop vegetables chunky style and place in 9×13 baking dish
-Coat vegetables with salt, pepper, Italian seasoning, and E.V.O.O.
-Preheat oven to 450
-Place boneless skinless chicken thighs on top of vegetables
-Salt and pepper chicken thighs
-1/4 cup of maple syrup
-1/2 cup of Dijon mustard
-1 tblspn of rice wine vinegar
-a dash of BBQ sauce
Pour sauce on top of chicken thighs. Place some foil on top of baking dish, and throw it in the oven for 40 minutes.
